About this product

270 mm sujihiki knife with a molybdenum-vanadium stainless-steel blade, black reinforced-wood handle and stainless-steel bolster. Made in Japan.

The sujihiki profile places a long cutting edge behind a narrow blade, making it a focused choice for trimming and slicing meat. Use a steady drawing motion on a stable board rather than the short chopping strokes of a broad chef’s knife.

The blade measures 270 mm, while the complete knife is 390 mm long and weighs 120 g. Choose this slender slicer for portioning work, or a Tsunouma gyuto when your routine also calls for frequent vegetable chopping.

Care: Hand wash, rinse and dry promptly. Avoid soaking and protect the edge during storage.

Product Overview

The Shimomura Tsunouma TU-9013 is a 270 mm sujihiki slicing knife. Its long, narrow blade is designed for trimming and portioning boneless meat, with room for a smooth drawing cut across larger pieces.

The molybdenum-vanadium stainless-steel blade is hand-finished with water-stone sharpening. A black reinforced laminated-wood handle and stainless-steel bolster complete the Western-style construction. The knife measures 390 mm overall and weighs 120 g.

Stainless steel with a reinforced-wood grip

Molybdenum and vanadium are added to the stainless blade steel, and the edge is finished by hand with water stones. The silver blade meets a dark laminated-wood handle through a stainless-steel bolster.

The shaped grip is secured by three visible rivets. Its black-and-silver finish coordinates with the other Tsunouma 9000 knives while retaining the blade shape chosen for this task.

Care for the edge and handle

Hand wash after use with a soft sponge and mild detergent, then rinse and dry the blade, bolster and handle promptly. Avoid soaking the wooden grip or leaving the knife wet in a sink; use a dishwasher only when the product is expressly marked as dishwasher-safe.

Work on a suitable cutting board and protect the edge during storage. Do not force or twist the blade through frozen food or hard bones. When the edge needs restoring, use a whetstone or a professional sharpening service suitable for the knife’s original edge geometry.
