Choose ribbons or fine vegetable strands

The flat blade produces curled slices and ribbons, while the comb blades divide vegetables into fine, medium or coarse strands. Change the cutting texture to suit salads, garnishes or vegetables prepared for cooking.

Select and secure the required blade before mounting an ingredient. Keep the spare blades away from the food-preparation area, and never change an insert while the crank is moving.

An upright layout for controlled turning

The top crank turns the vegetable down toward the cutting area. Hold the separate frame grip with your other hand to steady the slicer, and leave clear space beneath the base for the finished food.

Trim an ingredient so it can sit securely between the holder and cutting area. Turn steadily without forcing it, and stop before the holder or remaining piece can reach the blade.

Benriner Cook Help preparing carrot strands on a wooden work surface

Prepare garnishes with different textures

Use carrot strands to add color and texture to a salad, or make fine daikon shreds for a garnish. Work with one ingredient at a time so the different cuts stay separate until plating.

Shorten or trim vegetables on a cutting board before mounting them. Keep the receiving area clear as the strands collect, and stop the crank before removing food near the cutting edge.

Wash carefully, then store the blades safely

Clean the body and cutting parts after use with mild detergent and water. Hand washing allows you to remove trapped food without leaving sharp blades loose in a dishwasher; keep fingers away from the edges while rinsing.

Dry the slicer and inserts before storing them. Keep the blades together with their cutting edges protected and out of children's reach, ready to select the right cut for the next preparation task.
