The F-2173 Master line santoku features a 165 mm stainless-steel blade with a polyacetal-resin handle. It is the full-size solid-blade santoku option alongside the smaller 145 mm and 130 mm models in this group.

Choose its approximately 6.5-inch blade for a general preparation station that handles a changing mix of ingredients. The range also includes a perforated santoku, a longer Western-style knife and specialized petty and bread knives, allowing blade selection by task. This knife is dishwasher safe.
