Product Overview

Prepare seasoned sushi rice in the 26-inch I-654-66 cypress-wood hangiri. Made in Japan, this open, round tub keeps the rice accessible while you work with a paddle. Keep the tub on a clear, stable worktop, with seasoning and utensils within reach so you can move directly from mixing to portioning.

Choose this model as one individual tub in the six-size I-654 range. Rice paddles, rolling mats and other preparation tools are sold separately.

Work gently through the rice

Spread cooked rice across the wooden base and fold in the seasoning with a rice paddle. Use a light cutting-and-folding motion rather than pressing the rice into the tub.

Keep the worktop organized with the paddle and seasoning beside the hangiri. The open top lets you work across the rice before moving on to rolling, molding or hand-forming sushi.

Plan the space around the rim

Allow for the full 26-inch diameter and leave clearance around the rim for a paddle. Check the preparation counter, washing area and storage position before choosing a tub.

The I-654 range includes six separate tub sizes. Compare the product dimensions when choosing a preparation vessel; the rice, utensils and surrounding accessories shown are not included.

Rinse, wipe and dry thoroughly

After use, rinse the wooden surface gently and wipe away excess water with a clean towel. Let the tub air-dry thoroughly in a well-ventilated place before storage.

Keep the tub out of direct sunlight and away from direct heat. Avoid abrasive scrubbing and harsh detergents so the wooden interior is treated gently.
