Product Overview

The BSD-04 Premium S is a narrow bamboo makisu for shaping thin sushi rolls. Its 270 × 135 mm working surface provides a long edge for arranging the filling and a shorter depth for wrapping the nori around it.

Slender bamboo rods are linked with cord so the surface can lie flat, then curve around the roll. Doubled binding at the two outer tie positions reinforces the connections. Use this compact format for hosomaki, keeping a separate board nearby for slicing the finished roll.

Arrange a thin roll on the narrow surface

Lay the mat flat and position the nori so the filling runs along the long edge. Spread the rice in an even layer and add a restrained line of filling, leaving room for the nori to close around it.

The 135 mm short side suits a compact hosomaki setup rather than the working area of a full-size square mat. Keep the rice, nori and prepared filling close by, and clear the surface between rolls.

Guide the roll with the bamboo rods

Lift the leading edge of the mat to bring the nori over the filling. Apply gentle, even pressure along the roll while pulling the mat back out of the way, so the bamboo remains outside the food.

Three tie positions hold the slender rods together, with doubled cords at the outer positions. Once the roll holds its shape, move it to a cutting board before slicing; the flexible mat is not a cutting surface.

Clean between the rods and dry fully

Hand wash with mild detergent and a soft brush after preparation. Remove rice from the spaces between the rods and around the cords, then rinse without leaving the bamboo soaking in water.

Spread the mat open in a ventilated place and let both sides and the binding dry completely before storing. Check for loose cords, splinters or persistent discoloration, and replace a damaged mat.
