Product overview

The Blue Air BLR36-6B combines six open burners and an oven in a 36-inch-wide commercial cooking station. Individual burner controls let cooks manage several pots and pans while the oven handles baking or roasting. Removable cast-iron grates support cookware above the burners; two chrome oven racks fit multiple rack positions.

  • Six open burners: Each delivers 33,000 BTU/h on natural gas or 30,000 BTU/h after qualified LP conversion.
  • Adjustable oven: 175–500°F temperature range with a separate 35,000-BTU/h oven burner.
  • Moveable range: Four 6-inch casters, including two locking front casters; an independent restraint is required.

Cooking surface and construction

Six removable 12 × 12-inch cast-iron grates cover a 36 × 24-inch cooktop working area. That working-area measurement describes the cooktop, not the oven cavity. The stainless steel range has a porcelainized oven interior for cleaning. Natural gas is the standard factory configuration, and an LP conversion kit is included; conversion and pressure adjustments require qualified gas-service personnel.

Installation and gas planning

For commercial use only, with proper ventilation and a level, noncombustible floor. Have a qualified installer verify the supplied range’s fuel, rating plate, gas capacity and required clearances before installation. Leave room to open the oven door, remove racks and service the range. Keep combustion-air openings beneath the range and the flue unobstructed.

The caster installation requires an approved flexible gas connector and quick-disconnect device, plus an independent restraint attached to the rear frame. Gas piping must not act as the restraint. Provide an accessible upstream manual shutoff valve. The installer must leak-test connections with an approved detector or soap solution, never a flame. Keep gasoline and other flammable liquids or vapors away from the range.

Operation and cleaning

Each open burner has its own control and pilot; the oven has a separate thermostat and safety valve. Follow the supplied lighting instructions and do not leave the range operating unattended. Surfaces remain hot during and after cooking; do not move the range while hot.

Before cleaning, turn the burner controls and oven thermostat off, shut off the upstream gas supply and allow the range to cool. Keep burners and the crumb tray clear of food and grease. Clean stainless steel daily with a noncorrosive cleaner, working with the grain, then rinse and dry. Avoid abrasive or chlorine-based cleaners and acid or salt buildup. Do not spray the range directly with water, especially while hot. Wash cast-iron grates with warm soapy water, dry immediately and apply a light coating of food-grade oil. For extended shutdown, close all gas valves and extinguish standing pilots.

Warranty and documents

The one-year parts-and-labor warranty is for the original purchaser and ends one year from dealer sale or 15 months from Blue Air shipment, whichever comes first. Register within 15 days of installation. Coverage is subject to installation, maintenance and other exclusions; the current statement excludes use outside the United States and limits Alaska and Hawaii coverage to parts. Review the written terms for the supplied range.
