Doors and loading
Multi-pane, argon-filled glass lets staff see the cabinet contents without opening the door. The doors stay open at 90° and self-close at 75°. Full-height doors provide access along the cabinet section.
Keep food on properly installed shelves, not on the cabinet floor. Leave space between containers and interior surfaces, and keep air inlets and outlets unobstructed. Do not position food directly beside an air outlet or load any shelf beyond its rated capacity.
Hot-food holding
Preheat the cabinet before loading cooked, heated food. This cabinet holds food warm until service; do not use it to cook raw food or heat cold food. Cover food with heat-resistant wrap or use sealed containers to help limit drying and cross-contamination.
Monitor food temperatures and follow applicable food-safety requirements. Holding food below 140°F (60°C) can be hazardous. Keep doors closed between loading and serving, and use the supplied manual to set and check the controller.
Installation
Install indoors on a firm, level foundation in a non-corrosive location. Allow space for front and rear access and the full door swing. Keep ventilation openings clear, secure the casters and lock the front caster brakes after positioning. Confirm the delivered-unit nameplate, installed dimensions and electrical requirements before installation.
Connect to a properly grounded, independent 208–230V supply with an outlet matching the NEMA L14-20P plug. Do not use an adapter or extension cord. If GFCI protection is required, use a GFCI breaker rather than a GFCI receptacle. Have a qualified electrician confirm the supply and applicable electrical requirements.
Cleaning and care
Turn the cabinet off, unplug it, remove food and containers, and allow hot surfaces to cool before cleaning. Wipe spills promptly. Clean the interior and door gaskets with mild soap or detergent and warm water; remove and clean shelves regularly. Do not use hot water on the cabinet interior.
Use a clean, soft cloth and a suitable neutral cleaner on the exterior. Use products formulated for stainless steel, avoiding steel wool, abrasive cleaners and chlorine bleach. Do not splash, pour or spray water into the cabinet. Follow the supplied cleaning and sanitizing instructions and keep gaskets seated correctly.
