Product Overview

The U-5211 is an 11¾ × 9¾-inch pink plastic sushi mat from Kokubo/Kula. The ribbed rectangular surface opens flat for arranging nori, rice and filling, then bends to guide the roll into shape.

A round hole near one corner provides a hanging point after washing. Keep the mat at the assembly station and use a separate board for slicing. The U-5213 offers the same format in green; each mat is sold separately.

Arrange the filling on the open mat

Open the pink mat fully on a clean worktop. Place the nori on the textured side, spread an even layer of rice, and add the filling in a narrow line rather than covering the whole sheet.

Leave enough nori free to close the roll. Keep the rice bowl and paddle beside the working area so the mat can lift without catching loose ingredients or utensils.

Guide the roll with gentle pressure

Lift the leading edge to bring the nori over the filling. Press lightly across the width and draw the mat back as the roll closes, keeping the plastic outside the food.

The connected ribs curve together while supporting the roll. Open the mat to release the sushi, then move it onto a separate cutting board for portioning; keep knife edges away from the plastic surface.

Rinse the ribs and hang after drying

Hand wash with mild detergent and a soft sponge after use. Remove rice from the grooves and around the corner opening, rinse thoroughly, and let both faces dry before putting the mat away.

Use the corner hole to hang the clean, dry mat or store it flat. Keep it away from hot pans and direct heat, and check the ribs and flexible joins for damage before the next use.
