Seiryu Yanagi (Sashimi) Knife has a 240mm (9.4") long blade made out of stainless steel. The dark brown handle is made of hardwood with a black plastic bolster. Blade is honed at an angle only on one side and flat on the flip side. The knife's long, slender feature allows the sushi chef to cut lots of raw fish, sashimi, sushi and seafood in high-quality form. "Seiryu" is inscribed onto the blade in Japanese character, named after one of the four gods in the Chinese legend.

Product Overview

The Seiryu SRX240-S is a 240 mm yanagi-style sashimi knife with a 420J2 stainless-steel blade, brown-painted poplar handle and nylon bolster. The dark handle treatment distinguishes it from the lighter natural-wood appearance of the SR sashimi range.

Made in Seki, Japan, the blade has a hardness of HRC 50–53 and the complete knife is approximately 14½ inches long. The matching SRX270-S provides a longer blade with the same brown-handled styling, making blade length a useful comparison within the pair.

The brown-painted poplar handle meets the blade through a black nylon bolster. This contrasting material combination creates the characteristic brown-handled SRX appearance.

The blade is 420J2 stainless steel with a hardness of HRC 50–53. This Japanese-made model pairs that blade construction with an approximately 14½-inch overall footprint.
