Product Overview

The Hasegawa FMK-MG brings a flexible, embossed rolling surface to the sushi station. This medium green mat measures 250 × 240 mm and uses plastic slats joined by fine monofilament strands. The texture helps rice release, including when rice sits on the outside of a California-style roll.

Use the mat directly without adding a plastic-wrap covering. Its slats curve around the filling as you lift and shape, then open again to release the finished roll. Dishwasher-safe and bleach-safe care makes it practical to clean between sessions, while careful handling protects the binding.

Roll directly on the embossed surface

Spread the ingredients across the open mat and lift the leading edge to guide the roll closed. For rice-outside sushi, the embossed surface helps the exposed rice release without wrapping the mat in film.

Apply light, even pressure across the roll rather than pulling hard on the binding. Open the mat to release the sushi, then transfer it to a separate cutting board before slicing.

Choose the medium working area

The FMK-MG gives you a 250 mm-wide surface with 240 mm of working length. Its nearly square layout suits a compact preparation area.

The FMK-LG is the larger 250 × 305 mm option in the same green FMK range. Both are sold separately. Keep the rice bowl and paddle beside the mat so the surface remains clear for rolling.

Clean gently to protect the binding

Wash after use and dry before storage. The mat is dishwasher safe and bleach-safe, with a heat-resistance rating of 100°C (212°F). When hand washing, use a soft sponge rather than a brush; follow the cleaning product’s directions for dilution and rinsing.

Keep knives away from the mat and do not strike it against a sink or counter to dislodge food or water. Avoid excessive rolling force, and check the strands before the next use. These precautions help prevent the monofilament binding from breaking.
