A broad rectangular blade gives the Verdun OVD-172 Chinese-style kitchen knife its distinctive profile. Its 7⅛-inch stainless-steel blade meets a sculpted silver handle, creating a continuous all-silver appearance without contrasting wood or black handle scales.

This Japanese-made knife measures 13 inches long by 3.3 inches wide overall. Its tall blade face offers a different preparation format from the slender Verdun yanagi models and the pointed gyuto profiles; choose the knife around the ingredients and cutting task.
