THE PREP JOB
Why dedicated electric scallion machines exist.
Restaurant-volume scallion prep can require many repeated knife strokes. Korean commercial machines reduce that work by dedicating a feed and cutting mechanism to a particular finished cut.
That last point matters. Shin Young SY-1504 and SY-1608 may both be loosely described in English as electric green-onion slicers, but they do not perform the same operation. SY-1504 cuts along the scallion to make long strands. SY-1608 cuts across it to make short pieces or rounds.
The machines save cutting labor, not the entire prep sequence. Washing, trimming, orienting or peeling the ingredient, controlled feeding, catching, inspection, portioning, cleaning, and safe reassembly still belong to the kitchen.
LONGITUDINAL / VERTICAL-OUT
SY-1504: the unusual machine that cuts along the scallion.
A close mainstream U.S. equivalent to this vertical-out, long-strand machine is difficult to find. Its operation is quite different from a familiar cross-cut vegetable slicer.
Vertical feed, four intermeshing blade bundles
Prepared scallion is oriented lengthwise and fed down through the top. Two upper and two lower blade bundles intermesh to divide the stalk along its length; long strands discharge at the front.
The installed four-bundle set determines the nominal strand width. It is a head configuration, not a dial adjustment. Current manufacturer parts material lists 2.3, 3, 5, 7, and 10 mm sets and describes 3 mm as standard.
The operator still washes and trims the scallion, maintains its orientation while feeding, catches and separates the strands, inspects and portions the output, and cleans and reassembles the head.
CROSS-CUT / HORIZONTAL FEED
SY-1608: feed across the blade for short cross-cuts.
Where the SY-1504 follows the length of the stalk, the SY-1608 presents the stalk across a rotating blade. That change in direction produces a different restaurant prep.
Leaf-first feed across a rotating S-blade
The manual directs scallion into the front inlet leaf-first, using the supplied pusher. A two-edged stainless S-blade cuts across the stalk. The disc-to-blade gap and spacer-washer stack provide nominal 1–5 mm adjustment in 1 mm steps; the documented default is 4 mm.
Shin Young describes the SY-1608 at approximately 1,000 blade revolutions per minute. Because the S-blade has two cutting edges, that is approximately 2,000 cutting actions per minute. It is a blade-action figure, not ingredient throughput: feed pace remains under operator control.
Washing, trimming, orientation, feeding, catching, inspection, thickness changeover, cleaning, and exact-order reassembly remain manual.
SY-1504 VS. SY-1608
These are different cuts, not two capacities of one machine.
If the desired plate presentation is wrong, a higher production rating does not rescue the selection. Start with cut direction and output.

RELATED GARLIC MACHINE
SY-1610: a slower S-blade machine for prepared garlic cloves.
The family resemblance to SY-1608 is real, but the dedicated hopper and base speed are functional differences.
Separated, peeled, and prepared cloves drop through the top garlic hopper. A slower two-edged S-blade produces 마늘편—garlic slices. Nominal thickness is adjusted from 1–5 mm through the disc/blade gap and spacer stack; the documented default is 4 mm.
The machine does not split bulbs, peel cloves, trim defects, sort unsuitable material, feed itself, inspect the slices, or clean its cutting assembly.
Can SY-1608 and SY-1610 parts be interchanged?
They share an S-blade family and some front-component relationships, but physical fit does not establish supported ingredient use. Shin Young warns that the faster scallion-machine base can break garlic, while the slower garlic-machine base may fail to cut scallion leaves cleanly. The manufacturer recommends separate machines for the two jobs or choosing around the ingredient that would otherwise require more hand work.
In practical terms: a blade, cover, or inlet relationship is a parts fact—not permission to treat SY-1608 and SY-1610 as the same machine.
BEYOND STRAIGHT CROSS-CUTS
Diagonal scallions and 白髪ねぎ are separate prep jobs.
Japanese commercial equipment makers give these outputs distinct names and dedicated feed or preparation methods. That context helps prevent every narrow scallion cut from being described as the same thing.
Diagonal or bias scallions
斜め切り and ハス切り describe diagonal cutting, with the stalk presented obliquely to the blade. Shin Young separately maps thin 1–2 mm configured cuts to an SY-1608 base with a selected-angle front cover, but does not name the result diagonal and does not publish the cover angle, part number, availability, or revision fit. The standard SY-1608 should not be described as a diagonal cutter.
Fine white-hair scallion strands
白髪ねぎ refers to very fine lengthwise strands. Commercial methods may require segmenting, core removal, rolling, and deliberate fiber orientation before cutting. The available material does not establish that every SY-1504 blade configuration produces this specific preparation.
PRACTICAL TERMINOLOGY
Why the Korean and Japanese machine names do not always translate cleanly.
A useful English name should describe the operation and the expected cut, not just translate the ingredient noun.

BLADES, COVERS & REVISIONS
Order parts against the machine that is actually in front of you.
Shin Young’s component archive spans current and older generations. The model number is essential, but the installed head, cover, disc, fasteners, and production revision can matter just as much.
SY-1504 blade heads work as four-bundle sets
A complete head uses two upper and two lower bundles. Shin Young advises against mixing new and worn bundles. The current head is described for SY-0511, SY-1008, and SY-1504; an early SY-9008 also requires base and lid changes. Confirm the complete head and surrounding covers before ordering.
The current S-blade belongs to several generations
The two-edged S-blade is listed for SY-1608 and SY-1610 as well as other generations. It replaced discontinued half-moon blade families, while current, intermediate, and legacy discs and retaining nuts coexist. Match the blade, disc, nut, washers, shaft, and cover as an assembly.

Why the Korean voltage may not match the U.S. machine.
For installation, service, or machine-specific electrical work, use the actual machine nameplate as the final reference. A domestic Korean specification, an export range, and a current ERS U.S. listing describe different layers of the record.

Do not normalize 110 V to 120 V, treat an export range as proof of one universal-voltage machine, or carry wattage from SY-1608 over to SY-1610. Confirm the nameplate for the unit being installed.
One important U.S. caveat: these machines are not NSF-listed or ETL-listed.
Buyers should confirm the health-department, electrical, corporate, landlord, insurer, and project requirements that apply to their specific installation.

What to send ERS
- The full nameplate in one legible image.
- Model and serial, date, or revision markings.
- The exact voltage, frequency, current, and wattage wording.
- The complete blade or head, including bundle markings, disc, washers, nut, and shaft where applicable.
- The front cover, inlet, hopper, pusher, and discharge area.
- A clear overall machine image and close views of the part or problem.
Cleaning and safe changeover
- Disconnect power and wear gloves before disassembly; never place a hand in the inlet.
- Use the fitted cover, inlet, and pusher. Do not defeat the intended feed path.
- Clean SY-1504 blade bundles daily and preserve the correct upper/lower order; never directly rinse the gearbox.
- Current SY-1608 and SY-1610 manuals call for daily S-blade, disc, and washer removal, warm-water soaking, and exact-order reassembly.
- Keep water out of the switch and machine body, and follow the manual supplied with the exact revision.
