Commercial sushi machines and sushi robots can automate sushi-rice preparation, nigiri rice-ball forming, rice-sheet production, maki roll forming and wrapping, and sushi roll cutting. This guide compares the major types of commercial sushi equipment, where each machine fits in the sushi-production workflow, what it produces, and which steps still remain with the kitchen.

WHERE SUSHI AUTOMATION HELPS

A sushi machine usually takes over one production step—not the entire dish

Start with the production problem, not the category label. Identify the prepared food the kitchen can load, the step it wants machinery to perform, and the point where staff need to take over again.

Prepare seasoned rice

Mix and cool cooked rice with measured seasoning before portion or roll production.

Form rice portions

Meter and shape repeated nigiri portions or other rice-only forms.

Make sheets or rolls

Return a flat rice sheet or continue farther to a formed or wrapped whole roll.

Cut completed rolls

Segment an already formed roll with a defined blade or cut pattern.

What should come out of the machine?

Official lineups from AUTEC’s U.S. operation and Suzumo’s North American operation sell these as distinct machine tasks. Their mechanisms and terminology differ, so a category label alone does not tell the operator where production returns to staff.

PREPARING SEASONED SUSHI RICE

Rice mixing happens before portion or roll forming

A commercial sushi-rice mixer begins with cooked rice and measured seasoning. It mixes and manages cooling or aeration, then returns prepared rice for a separate downstream operation.

What the equipment handles

Mixing pattern, cooling or aeration, batch size, and discharge vary by machine. The output is prepared seasoned rice—not formed nigiri or a finished roll.

What remains with the kitchen

Rice cooking, seasoning measurement, loading, receiving or transferring the batch, every forming and assembly step, and the documented cleaning routine remain outside the mixing cycle.

AUTEC’s ASM730A and ASM780A show two scales of the same task. Their documented 3.3–6.6 kg and 6.6–13.2 kg ranges are cooked-rice batch weights; ASM780A also adds automatic discharge into a separately supplied rice box.

Suzumo’s MCR-ASB follows the same broad handoff through a different machine: the operator loads cooked rice and vinegar, and the machine mixes, aerates or cools, and discharges the batch. Its maximum batch and cycle time likewise describe rice preparation rather than finished-sushi output.

FORMING REPEATED RICE PORTIONS

Forming the rice portion is not the same as producing finished nigiri

Choose a former by the rice condition it accepts, the portion geometry it produces, and the handling that follows. Topping is a separate operation unless the exact system explicitly documents it.

Nigiri rice portions

AUTEC ASM440A meters and shapes prepared shari, then dispenses individual portions to a turntable. Its forming rollers and settings affect portion weight, density, and compression; the documented 16–24 g range and maximum rate apply to formed rice portions, not finished nigiri.

Suzumo SSN-KTA also stops at the rice portion: it loosens and forms shari with adjustable portion and firmness, while topping remains external. Pairing it with the TRS-JLX extends the system through transfer and tray arrangement, showing that equipment in the same broad class can take responsibility for different downstream handling.

Larger rice-only forms

AUTEC ASM575A uses interchangeable forming units for documented triangular onigiri, rectangular rice portions, sushi-rice portions, and makunouchi forms. Shape, rice amount, and applicable rate change with the installed unit and settings.

Its North American manual is explicit that the machine makes rice only. Fillings, toppings, nori, wrapping, packing, and other menu-item completion remain outside the machine.

RICE SHEETS, WHOLE ROLLS & CUT ROLLS

For rolls, the key difference is what comes out of the machine

A sheeter, roll former or wrapper, and cutter return production to the kitchen at different points. They may be separate machines or separate stages in a larger equipment arrangement.

Manufacturer terminology is not perfectly interchangeable. AUTEC describes ASM890A as a rice sheeter and wrapper; Suzumo’s SVR-NXA uses a forming plate to roll the operator-loaded assembly. Both return a whole roll for cutting, but their controls, accepted materials, adjustments, and operating sequences remain model-specific.

Likewise, the ASM895A and SVR-NYA stop at a rice sheet, while ASM260A and SVC-ATC-ET begin with a completed roll. Compare the actual input and output rather than assuming machines with similar category names perform the same work.

Official AUTEC demonstration: ASM890A forms the rice sheet and wraps after the operator supplies nori and fillings. The whole roll still exits for cutting.

WHAT THE PUBLISHED NUMBER COUNTS

Don’t compare capacity numbers until you know what each machine is counting

Capacity can describe a rice batch, formed portions, rice sheets, machine cycles, whole rolls, or cutter loads. Those measures cover different outputs and different amounts of the restaurant workflow.

Keep the start point, end point, and unit of measure visible

AUTEC’s ASM440A rate counts rice portions, ASM890A publishes machine-cycle time, and ASM260A defines capacity by whole-roll load. Suzumo states that SVR-NYA sheet and SVR-NXA roll output depend on operator speed. Compare equipment only after those definitions and operating conditions are aligned.

REGIONAL AND MODEL-SPECIFIC RECORDS

Use the specifications for the exact U.S. machine

Regional versions can have different electrical and dimensional records even when their base model names look related. How a manufacturer identifies those versions varies, so use the documentation supplied for the actual unit.

Use the North American manual supplied for the exact unit and read its nameplate before connecting power. Confirm frequency, current, plug, circuit, listings, clearances, and local project requirements rather than transferring a value from a related model or market.

AUTEC’s current U.S. and broader English lineups are not identical. Its ASM440A U.S. page omits electrical data, so the exact manual and nameplate remain the appropriate source for that unit rather than a normalized public value.

Lifecycle and parts relationships are equally specific. AUTEC identifies ASM410A as the previous U.S. model for selected ASM440A forming-roller compatibility, ASM880A as a predecessor to ASM890A, and specified ASM230 variants as predecessors to ASM260. Those relationships do not establish universal parts interchangeability, and support dates remain suffix- and revision-specific.

ERS supplies AUTEC as one concrete equipment family within commercial sushi machinery. Selection should still begin with the kitchen’s required input, output, operating sequence, and U.S. configuration rather than the manufacturer name alone.

BEFORE, DURING & AFTER PRODUCTION

Cleaning, setup, parts, and daily operation

Input preparation, attachments, changeovers, sanitation, lubrication, consumables, and service procedures vary by manufacturer and model. The exact operating manual belongs beside the buying decision.

Questions to answer for any machine

  • What rice condition, ingredients, and loading steps must be ready before the cycle starts?
  • Which forming unit, wrapping component, cutter frame, or program determines the output?
  • What must be removed, washed, wiped, inspected, lubricated, or reassembled each day?
  • Which exact model, suffix, serial or revision, manual, parts path, and service contact support the unit?

Examples from AUTEC North American manuals

  • Shut down and unplug before the documented disassembly sequence.
  • Wash specified removable food-contact parts with neutral detergent and wipe rather than wash the main body.
  • Keep identified sensors clean and reinstall components in their documented positions.
  • Apply AUTEC food-machine oil only to the surfaces and at the frequency specified for the exact model.

Parts and support procedures are manufacturer-specific

AUTEC’s U.S. FAQ says official manuals are supplied digitally through the sales agent. Replacement parts are available through AUTEC and the failed part may need to be returned; warranty terms should be confirmed for the purchase. Other manufacturers maintain their own documentation and service paths.

CHOOSING THE PRODUCTION STEP

Choose based on the output your kitchen needs

Match the equipment to the physical handoff required for the kitchen’s next production step.

  • Seasoned sushi rice: evaluate rice-preparation and mixing equipment.
  • Repeated rice portions: evaluate portion-forming equipment.
  • Rice sheets or whole rolls: choose the sheet-forming, roll-forming, or wrapping equipment that returns the required format.
  • Completed whole rolls: evaluate roll-cutting equipment for the required cut pattern.

Before selecting a model, verify its accepted input, exact physical output, the work that remains with staff, the specifications for the exact U.S. machine, and its setup, cleaning, parts, and support requirements.
