The AUTEC ASM260A Maki Sushi Cutter is a commercial automatic sushi roll cutting machine designed to quickly and consistently portion finished maki into uniform pieces. Depending on the installed cutter unit, the ASM260A can cut sushi rolls into 6, 8, 10, or 12 pieces, making it suitable for a range of maki, hosomaki, inside-out rolls, futomaki, and specialty sushi presentations.

The ASM260A uses an upward cutting mechanism that raises the completed roll through the cutter unit. Its larger cutting base allows multiple smaller rolls to be portioned in a single cycle—up to four 24 mm hosomaki rolls, two 35 mm inside-out rolls, or one 45 mm futomaki—while rolls with toppings, including rainbow rolls, can be cut without first removing those toppings. The machine accommodates finished sushi rolls approximately 24–50 mm in diameter and completes the cutting action in approximately two seconds.

Interchangeable blade frames allow operators to change portion counts for different menu requirements, while the protected cutting area minimizes direct contact with the blades. Only four components require removal for routine disassembly and cleaning, helping make the machine practical for daily commercial sushi production.

As a commercial sushi cutter, automatic maki cutter, and sushi roll portioning machine, the ASM260A is designed for the cutting stage of a sushi production line after the roll has been formed. It can be used alongside a sushi rice sheeter and maki wrapper in sushi restaurants, supermarket and grocery sushi departments, commissaries, catering kitchens, institutional foodservice operations, and other high-volume sushi programs. AUTEC manufactures the ASM260A in Tokyo, Japan and backs it with a one-year manufacturer warranty.

Features

  • Automatic Commercial Sushi Roll Cutting: Automatically portions finished sushi rolls into uniform pieces, reducing repetitive manual knife cutting during commercial maki production.
  • 6-, 8-, 10- and 12-Piece Cutting Options: Interchangeable cutter units allow operators to select different portion counts for varying sushi-roll presentations and menu formats.
  • Approximately 2-Second Cutting Cycle: Completes the cutting action in about two seconds to support fast, repeatable sushi production during high-volume service and prep.
  • Multi-Roll Cutting Capacity: The enlarged cutting base can process as many as four hosomaki rolls or two standard inside-out rolls in a single cutting cycle.
  • Up to 2,400 Small Rolls Per Hour: When cutting four approximately 24 mm hosomaki simultaneously, the ASM260A can support production rates of up to approximately 2,400 rolls per hour under stated operating conditions.
  • Upward Cutting Mechanism: Raises the sushi roll through the cutter blades to reproduce a controlled chef-knife-style cutting action while helping preserve the roll’s cylindrical shape.
  • Cuts Rolls with Toppings: The upward cutting design allows specialty rolls such as rainbow rolls to be portioned with toppings already applied, reducing additional handling after cutting.
  • Broad 24–50 mm Roll Range: Accommodates thin hosomaki, standard maki and uramaki, larger futomaki, and other commercial sushi-roll formats.
  • Interchangeable Blade Frames: Cutter assemblies can be exchanged to change portion count and finished piece size for different menu requirements.
  • Consistent Portioning: Fixed blade spacing helps produce repeatable sushi-piece widths and presentation across multiple rolls and operators.
  • Large Cutting Base: Provides enough working area to cut multiple smaller rolls simultaneously for increased throughput.
  • Protective Front Cover: Finished rolls are cut behind the machine’s front cover, helping minimize direct operator contact with the cutter blades.
  • Blade Safety System: AUTEC’s blade-protection and safety design helps protect the cutter assembly and supports safer commercial operation.
  • Simple Two-Button Operation: Operators place the finished sushi roll in the cutting area and use the machine’s straightforward controls to initiate and reset the cutting cycle.
  • Easy Assembly and Disassembly: Four removable components simplify routine breakdown, cleaning, sanitation, and reassembly.
  • Compact Countertop Footprint: Provides automated sushi cutting in a 14.9-inch-wide machine suitable for sushi bars, prep counters, supermarkets, commissaries, and production kitchens.
