Choose the face for the edge

Begin with the 1000-grit face when the knife is dull, then use the 6000-grit face when a finer finish is wanted. Do not treat the fine side as a substitute for repairing chips or substantial damage. Match the sharpening sequence to the blade’s condition.

Turn the stone, then secure it

Lift the block from its base and turn it over to change grades. Make sure it sits securely before resuming the stroke, and leave room around the base for the blade and both hands. Follow the knife maker’s guidance for the bevel and sharpening angle.

Prepare with water and store dry

Follow the supplied water-preparation directions for each face. Rinse away residue after use and let the stone dry in shade before storage. Inspect both working faces for hollows and flatten them with a suitable stone-flattening tool or water-resistant abrasive paper as needed.
