How Much Rice Does a Commercial Rice Cooker Make? Tested Capacity, Cook Time & Production by Model

ERS tested 74 rice-cooker configurations across 222 controlled runs to establish a measured performance baseline for rated capacity, finished yield, usable output, cook time, service-ready time and production by model.

Research findings / 01

Rated capacity is not production performance

Commercial rice cookers are sold in cups, liters, pounds and kilograms. Some ratings describe uncooked rice; others describe cooked cups. Even similar capacity labels do not establish how much usable rice a machine produces or how long that batch takes to reach service.

This benchmark connects manufacturer-rated capacity to tested dry load, finished cooked output, usable output, cook-cycle time, service-ready time and standardized serving equivalents. It covers 74 configurations and 222 runs, with three repetitions per configuration: 13 primary benchmark configurations and 61 lower-capacity or compact configurations.

For 24 years, ERS has supplied more than 11,000 rice cookers and warmers to 3,600+ foodservice locations across 41 U.S. states. ERS conducted every benchmark test directly in a controlled restaurant-kitchen environment, with three measured runs per configuration and a consistent measurement protocol across the study. The results are first-party ERS performance data, not manufacturer claims or compiled third-party specifications.

Similar batches, different time to service

The five approximately 4.5 kg configurations varied by 0.6% in dry load and 2.3% in usable output. Service-ready time ranged from 31.0 to 57.5 minutes, producing an 86% spread in Service-Ready Batch Rate.

Comparable machines can converge

Countertop electric cookers, commercial IH systems, gas batch cookers and parallel-deck systems create capacity in different ways. The common production measures preserve those architectural distinctions.

Capacity normalization / 03

Compare physical quantities before comparing capacity labels

A rice-cooker cup is not automatically a household measuring cup, and a cooked-cup claim is not a measured cooked mass. Manufacturer conventions remain visible alongside the tested result.

  • Zojirushi NYC-36ST: 20 cups / 3.6 L raw short-grain white rice, with an approximately 180 mL raw-rice cup.
  • Panasonic GB42 / GB54 / GB72: 23 cups / 4.2 L raw rice, 30 cups / 5.4 L raw rice and 40 cups / 7.2 L raw rice.
  • CUCKOO CR-3032 and Narita NRC-1160 both use uncooked/cooked cup terminology. Narita's public capacity basis does not define the cup volume as explicitly as Zojirushi's.
  • Mevience ZEUS-IH54C: 10 lb / 4.5 kg max raw white rice; manual max white-rice volume 5.4 L.
  • Hattori: 14 kg total raw-rice rated capacity; 2 decks and 21 kg total raw-rice rated capacity; 3 decks.
  • Rinnai RER-55AS: 10.0 L dry rice maximum (55-cup class), with an internal water-level procedure.

The Mevience manufacturer's explicit 4.5 kg raw-rice rating can be read directly against its 4.50 kg tested dry load. CUCKOO's 60 cups cooked claim and 10.26 kg finished result use different physical bases and remain side by side.

Read batch output and time together

The approximately 4.5 kg class: similar batches, different timelines

Nearly the same usable batch can take substantially different time to reach service. Tested dry loads differed by 0.6%; usable output differed by 2.3%. Each batch provided roughly 71–73 five-ounce equivalents.

The Panasonic SR-GB54H reached service-ready completion in 31.0 minutes; the CUCKOO CR-3032 took 57.5 minutes. The corresponding batch rates were 19.63 and 10.56 kg/h equivalent. The batch quantity changed little while the time required to make it available changed substantially.

Capacity answers how much rice a cooker accepts. Production planning also needs the usable quantity and the time the machine occupies before that batch reaches service.

Panasonic SR-UH36FH and Zojirushi NYC-36ST converge closely

These approximately 20-cup / 3.6 L configurations differed by about 1 g in tested dry load, 0.9% in usable output and 0.9 minute in service-ready completion.

The benchmark shows a close production match. Zojirushi defines its raw-rice cup and rates the NYC-36 at 120V / 1,300W; Panasonic positions the UH36 as a professional cooker with powered Keep Warm. Those specification details do not create a large output difference in these results.

From SR-GB42H to SR-GB54H, tested dry load increased 30.6%, usable output increased 29.5% and service-ready time increased 6.7%. The resulting batch-rate increase was 21.4%.

From SR-GB54H to SR-GB72, dry load increased 33.2% and usable output increased 38.7%, while service-ready time increased 24.0%. Batch rate increased 11.9%. Larger batches increase output without guaranteeing a proportional increase in production per unit of time.

Same platform, different pan: SR-GB54H and SR-GB54FH

Both configurations share the manufacturer's 30-cup / 5.4 L, 1,800W platform. The GB54FH uses nonstick-coated aluminum; the GB54H uses anodized aluminum. Their usable output differed by 35 g (0.34%), service-ready time by 0.2 minute and batch rate by 0.3%.

Hattori: adding capacity in parallel

Hattori's LG-000-100 uses two decks; the LG-000-150 adds a third. The manufacturer rates the systems at 14 and 21 kg of raw rice, with 20.9 and 31.4 kW gas input and independently programmable deck starts.

Usable output increased from 31.48 to 47.31 kg (50.3%), while service-ready time changed from 31.9 to 32.1 minutes. Parallel cooking adds approximately proportional output with little change in completion time.

Rinnai: cook completion and service-ready completion are different events

The RER-55AS main cooking cycle ended at 27.5 minutes. Its service-ready endpoint was 39.8 minutes, after the prescribed covered Keep Warm completion period. Its 18.07 kg usable batch therefore corresponds to 27.27 kg/h equivalent.

The manufacturer's approximately 10–15 minute post-cook stage is part of the production interval. The external recommended presoak occurs before cook activation and is excluded.

Mevience: a commercial IH configuration on the same measured basis

The ZEUS-IH54C produced 10.14 kg of usable rice from 4.50 kg dry rice, reaching service-ready completion in 53.3 minutes. This places a commercial IH system alongside conventional electric and gas equipment using the same output and timing measures.

Where the primary cohort converged

Mean usable yield ranged from 98.32% to 98.58% across the primary cohort, a spread of 0.27 percentage point. Recoverable yield did not meaningfully separate these machines; batch size and time did.

Mean completion temperatures ranged from 196.6°F to 201.8°F. That narrow range accompanied much larger differences in batch scale and service-ready timing. The evidence does not support turning every measured field into a differentiator.

ERS Tested Performance: primary model records

Each record represents one configuration, with a stable citation anchor and its exact mapped product page. Manufacturer statements remain distinct from three-run results. Equivalent cosmetic product variants share a performance record; they are not additional independent tests.

CUCKOO CR-3032 — ERS Tested Performance

CUCKOO identifies the CR-3032 as a commercial heating-plate cooker. Its published rating is 30 cups uncooked / 60 cups cooked. The manufacturer's steam phase continues after the switch to Warm.

Its usable batch was comparable to the other approximately 4.5 kg configurations, while its 57.5-minute service-ready duration was the longest in that peer group. Cook completion at 40.5 minutes and completion of the prescribed steam phase are separate events.

Hattori rates the two-deck LG-000-100 at 14 kg total raw-rice rated capacity; 2 decks, with 20.9 kW gas input and independently programmable deck start timing.

The two-deck system produced 31.48 kg of usable rice in 31.9 minutes. This establishes the two-deck reference for the parallel-production comparison.

The LG-000-150 adds a third cooking deck, with a published rating of 21 kg total raw-rice rated capacity; 3 decks and 31.4 kW gas input.

Compared with the LG-000-100, the additional deck increased usable output by 50.3% with a 0.6% change in service-ready time. The additional batch capacity operates in parallel.

Mevience ZEUS-IH54C — ERS Tested Performance

Mevience rates this commercial IH cooker at 10 lb / 4.5 kg max raw white rice; manual max white-rice volume 5.4 L. It specifies 208V single-phase power, 25A and 4,570W, with programs for white, sushi, seasoned, brown and rinse-free rice and porridge.

The ZEUS produced 10.14 kg of usable rice, essentially the same batch quantity as its approximately 4.5 kg peers. Its 53.3-minute service-ready cycle was longer than the Panasonic GB54 configurations. This is a model-level result, not a conclusion about all IH equipment.

How the benchmark measures performance

The rated or maximum white-rice load and applicable manufacturer procedure define each configuration's condition. The question is what each cooker produces at that condition, rather than what happens when unlike machines are forced through one universal recipe.

Population, dates and repetitions

The collection snapshot is 2026-09-28. The study includes 74 configurations, 222 valid runs and 77 represented cooker product pages. Recorded test dates span 2026-08-01 through 2026-09-26. Each configuration has three valid runs. Dedicated warmers, accessories and sold-out configurations are excluded.

Published means are arithmetic means of the three run-level values, including derived metrics. Ranges are the observed minimum and maximum across those repetitions. Equivalent cosmetic variants share one configuration and one three-run record.

Test Controls & Reproducibility

ERS standardized the reference condition at each configuration's manufacturer-rated or maximum white-rice load and followed its applicable preparation, water-fill, cooking-program and completion instructions. ERS measured dry-rice mass and cooking-water input separately, repeated each configuration three times, and recorded cook-cycle time, service-ready time, completion temperature, finished cooked weight and usable output for every run.

Water-line procedures remain model-specific. Finished weight covers the completed batch at the service-ready endpoint; usable output is the rice recoverable for normal service after completion and fluffing. A cooked-cup claim is not converted into an output-mass realization percentage.

Two timing endpoints

Cook Cycle runs from cook activation to the equipment's primary completion event, such as burner shutoff or automatic program completion. Service-Ready Time runs from that same activation through any documented mandatory post-cook steam, rest, Keep Warm completion or pressure release.

Washing, loading and external optional or recommended presoak are excluded. Automated preparation after Start remains within the machine cycle. Where the baseline establishes no separate mandatory timed completion phase, service-ready time equals cook-cycle time. A program that already ends ready to serve receives no additional delay.

Capacity, inputs, output and derived metrics

Manufacturer Rated Capacity
Nominal capacity in the manufacturer's stated units and raw/cooked basis. It is not measured finished output.
Tested Dry-Rice Load
Dry-rice mass loaded for the rated-load run, recorded in grams and displayed in kilograms in the comparison tables.
Water Input
Cooking water input recorded separately from dry-rice mass. Rinse or soak retention is not separately quantified.
Finished Output
Total completed-batch mass at the service-ready endpoint, before nonusable material is excluded.
Usable Output
Cooked-rice mass recoverable for normal service after completion and fluffing. It never exceeds finished output.
Cooked Yield Factor
Finished cooked mass ÷ dry-rice mass. Manufacturer-specific water and preparation regimes affect this ratio.
Usable Yield
Usable output ÷ finished cooked output × 100.
Service-Ready Batch Rate
Usable output in kilograms ÷ service-ready time in hours, expressed as kg/h equivalent.
Serving equivalents
Usable output divided by a fixed portion mass: 3 oz = 85.049 g; 4 oz = 113.398 g; 5 oz = 141.748 g; 6 oz = 170.097 g. These are conversion references, not prescribed portions.
Completion Temperature
The recorded rice temperature at service-ready completion, in °F.

Masses are recorded to 1 g; times and temperatures to 0.1 minute and 0.1°F. Published display precision does not change the unrounded means used in calculations. Rinse or soak retention is not separately quantified, so finished mass is interpreted with the preparation method rather than a false strict ceiling of dry rice plus logged water.

Relationship to emerging test standards

The October 17, 2025 ANSI project notice identifies ASTM WK96524 as a proposed commercial rice-cooker performance test method covering energy and water consumption, cooking performance and productivity. It describes a draft scope under development. ANSI Standards Action, page 4.

ERS conducted this study independently. This report does not claim testing under WK96524, ASTM certification, validation or compliance.

What these results establish

  • Rated-load condition: partial and minimum-load performance can differ.
  • Rice and preparation: cultivar, crop year, milling, initial moisture and manufacturer-specific water, soaking and rest procedures can affect yield and timing. Yield reflects the complete preparation-and-cooking system.
  • Single-batch normalization: Service-Ready Batch Rate is not measured sustained back-to-back hourly throughput. Reload time, turnaround, operator tasks and recovery between batches were not separately measured.
  • Three repetitions: these means and observed ranges describe the recorded configurations and conditions, not population-level reliability or every installation.
  • Measured dimensions: the report does not test energy efficiency, holding performance, taste/texture, cleaning, durability, reliability or total cost of ownership. Completion temperature is not a holding-performance or food-safety assessment.
  • Model-level interpretation: an individual IH, gas or electric result does not establish universal superiority for that technology.
  • Assortment snapshot: the study describes the recorded active assortment and performance-equivalence groups. Current specifications, listings, installation requirements and availability belong to product documentation.
