01 / Checklist

Set the scope of your checklist

Select the rows for the work your operation actually retains. Whole fish, prepared neta, raw rice, prepared shari and finished central-kitchen output create different local purchases. Dining-room service, omakase, hand rolls, conveyor service, takeaway, retail and hospitality add their own physical requirements. Existing or shared provision counts when it is compatible, serviceable, allocated and available for that work.

The quantity column identifies what to count. Use your actual batches, simultaneous work, complete presentations and return commitments. The selected food-control method, manufacturer instructions and applicable local requirements govern the relevant equipment and supplies. Resolve uncertain premises or installation through the site checklist and commercial requirements guide before committing the order.

For the wider equipment choices, use the complete sushi restaurant equipment and supplies guide.

Receiving, refrigeration and storage

Specify storage through its actual loads and supports. A reserve refrigerator, working display, cooling arrangement and on-site freezing treatment perform different duties, even when the proposed equipment is shared.

Receiving, refrigeration and storage
Equipment or supply Include in the specification Quantity basis
Receiving surface and inspection position Landing for incoming cases or prepared loads; access for inspection, measurements and records. Overlapping deliveries and the loads awaiting transfer.
Hand trucks, platform trucks and receiving carts Load support, wheels, route clearance and empty-cart storage; identify who supplies unloading and movement. Simultaneous moves and cart return, using the loaded weight and envelope.
Receiving thermometer and check supplies Instrument suited to the required measurement, verification provision, hygienic handling, batteries and records. Receiving/checking points that need an instrument available at the same time.
Reserve refrigerated storage Usable shelves or pan supports, covered containers, monitoring, airflow and door/withdrawal access. Actual simultaneous ingredient, prepared-food and returned-from-display loads.
Frozen-stock storage Compatible packed loads, identification, separation and monitoring. Incoming food form, delivery pattern and allocated frozen stock.
On-site parasite-destruction provision, where required Equipment and supported load/process, measurement/records and separation of released stock. The accepted treatment duty; distinguish it from ordinary frozen storage or documented upstream treatment.
Cooling equipment and receiving storage, where used Selected cooling method, compatible pans/loading depth, racks, probes and receiving space. Retained batches and overlap; reconcile with the hot-kitchen cooling provision.
Dry ingredient shelving and bins Configured supports, bins, matching lids, scoops, identification and retrieval/cleaning access. Delivered packs and actual working/reserve quantities.
Refrigerated, dry and clean-equipment shelving Complete bays: shelves, posts, clips, feet/casters and specified restraints; correct environment and load suitability. Usable configured bays and storage positions.
Food containers, covers and inserts Exact matching series and sizes, actual loaded stack, cover access and removal. Complete covered loads, including occupied and returning containers.
Packaging and consumable storage Protected dry storage for working packs and delivered cartons, with a usable replenishment route. Opening stock in its actual delivered pack geometry.

Match containers and covers by the documented family. Cambro's 10PPCWSC, for example, is a specified full-size Seal Cover, not a universal lid for every similarly sized pan. Include the actual cover and loaded stack when checking the storage arrangement. Cambro Seal Covers.

Use seafood refrigeration and cold-chain equipment for the storage choice and central-kitchen planning where food arrives from another production site. Shop ERS refrigerators and kitchen supplies.

Rice preparation and working shari

Follow the retained rice work through washing, cooking, seasoning, transfer and working supply. Where rice or shari arrives prepared, keep the receiving, control and replenishment provision and remove only the work already done upstream.

Rice preparation and working shari
Equipment or supply Include in the specification Quantity basis
Rice weighing and measuring Selected units, scale where used, correct measuring vessels and scoops. Batch method and simultaneous measuring duties.
Rice washing and draining Basin/colander or washer, water/waste, stable support, receiving vessel and transfer. Retained batches, draining occupancy and next available receiver.
Commercial rice cooker Exact pan/lid and supplied accessories, support, connection, steam clearance and vessel-removal space. Usable batch sequence through cooking, transfer and return.
Gas-cooker installation, if selected Correct gas configuration, qualified connection, applicable ventilation and operating/service access. Selected unit and actual site scope; assign each connection and trade task.
Circulating or spare cooker vessels Model-compatible pans/lids/components, permitted care and ready storage. Actual vessel occupancy, return delay or defined interruption cover.
Hangiri or other seasoning vessel Working batch capacity, support, shamoji, transfer and construction-appropriate drying/storage. Overlapping seasoning batches and complete vessel return.
Rice mixer, if selected Input handling, exact discharge receiver, guide/support, removal space, washable parts and operating supplies. Batch load and compatible receiver geometry, with the next vessel ready when required.
Shamoji, paddles and scrapers Suitable working head/handle, food contact, care and clean utensil placement. Simultaneous transfer/mixing/service tasks and clean replacements.
Working shari vessel or selected warmer Complete body/lid, tray or insert where used, support, replenishment access and selected control provision. Usable working supply through the next replenishment.
Insulated rice containers and trays Matched body/lid/tray family, intended stack, lid landing and loaded handling. Complete allocated loads through transport, use and return.
Rice time/control identification Time reference, batch/position labels or records and disposition provision required by the chosen process. Actual separate batches and working positions.
pH measurement kit, where required Appropriate meter/probe, compatible buffers, sample/rinse vessels, storage and cleaning supplies, batteries and records. Complete usable opening kit under the accepted method; account for starter inclusions and planned use.

Separate the seasoning vessel where the cooker requires it. Zojirushi's NYC-36 manual prohibits vinegar in the coated inner pan. The cooker, its spare pan and the seasoning vessel are separate purchasing decisions. NYC-36 instructions.

Complete the measuring kit. Where the accepted rice process requires pH measurement, the Hanna HI9810352 illustrates the surrounding supply: compatible calibration buffers, sample/rinse vessels, electrode storage and cleaning supplies, batteries and records. Rinse water and electrode storage solution have different jobs. Select the method and supplies together. HI9810352 manual.

A mixer receiver must accommodate the actual batch and fit the discharge/guide arrangement. A large enough kilogram rating alone does not establish that pairing. For batch and working-supply decisions, see sushi production capacity and sizing. Shop rice cookers and warmers and sushi machines.

Vegetable knives, peelers, mandolines or processors Required cut, correct attachment/guard, support, receiver and cleaning/storage. Retained vegetable work and useful batch/output.
Draining inserts and catch pans Compatible insert, vessel and cover with withdrawal access. Prepared loads and time occupying the draining arrangement.
Absorbent, contact or dehydration sheets Correct function, food-contact format and protected unused supply. Actual specified application; distinguish the functions before ordering.
Vacuum/ROP equipment, where the process requires it Compatible bags/seal, labeling, control and holding provision for the accepted retained process. Actual packaging duty and downstream storage.

Put handedness on the knife order. TOJIRO's F-910 is specified as a 300 mm right-handed single-bevel yanagi, with left-handed availability by request. Select the actual configuration, then its board and protection; a length alone is insufficient. TOJIRO specification · F910 at ERS.

Board construction also belongs in the specification. Hasegawa's Pro-Soft uses a plastic-covered wood core; support, care and permitted renewal must suit that construction. Keep the board's identity with the purchase rather than treating every soft board as the same material. Hasegawa Pro-Soft.

Use the professional knives, boards and sharpening guide and manual preparation tools guide for the detailed selections. Shop ERS cutlery.

Wrap, foil, liners and prep consumables Correct grade/width, dispenser/cutter and protected reserve. Actual procedure and opening use in the supplied pack units.

Display and reserve. Hoshizaki's HNC-150BA-L-SLH provides a specific purchasing check: the documented display duty does not replace overnight storage, and included food plates and a drain hose still leave the actual installed drainage and reserve arrangement to resolve. HNC product specification.

Configured drawers. For a drawer refrigerator such as UR48B-D4, confirm the selected pan depths, front/rear arrangement and divider configuration against the detailed sheet. The storage-volume figure and drawer count do not specify the usable pan layout. UR48B-D4 sheet.

Working tools. The hinged NC-1 nori container is a working-access choice; retain the protected reserve separately. For the Hasegawa FMK-MG mat, the maker's binding-care instructions call for gentle handling and a soft sponge for soil removal, with knife contact and brush cleaning excluded. A press likewise needs its matched upper form, frame and base; Sumibe's shaping-tool catalog identifies those separate parts. Hasegawa mat instructions · Sumibe press catalog.

Go deeper with workstation design, neta display cases and nori, neta and mise en place. The omakase counter and hand-roll format guides develop their respective handoffs. Shop refrigerated sushi cases.

Three exact companion checks are worth carrying into the quote:

  • Suzumo lists the KHS one-way-container adapter as optional for its SSN-KTA-AC/TRS-JLX-AC combination. Name the required adapter and compatible receiver in the offer. Suzumo combination.
  • The ASM260A cutting arrangement needs matched cutting components/base and protection, with a compatible return that respects its automatic-dishwashing prohibition. Manufacturer-authored ASM260A instructions.
  • Where the machine specifies it, AUTEX with a spray trigger completes an operating-supply purchase. Its application follows the exact machine instructions; cleaning and sanitizing supplies are separate.

Supporting hot kitchen

Include the cooking behind the sushi: tamago, cooked neta, fillings, dashi and sauces, along with any tempura, grilled food, noodles or other menu items. Purchased preparation and shared kitchens change the retained work; record the actual local cook, finish, reheat, hold and cooling duties.

Supporting hot kitchen
Equipment or supply Include in the specification Quantity basis
Range, burners or induction Compatible cookware/supports, usable control, exact services and installation. Simultaneous retained processes and pan occupancy.
Tamago pans, molds and tools Vessel geometry/material/handle suited to the method; appropriate turners, lids and support. Actual rolled, thick pan-cooked or oven-cooked preparation.

Cooling pans, racks and ice tools Complete selected cooling method, measurement and receiving storage. Actual cooked batches and overlap with other cooling work.
Hot-food handling and protection Suitable mitts, lifting/turning tools, stable lands and separate clean storage. Occupied hot duties and tool return.

Match the cookware to the heat source and tools. Marushin's copper-cookware instructions exclude induction use and state that all-metal induction suitability has not been verified; they also warn that metal implements can damage the hand-tinned interior. That is a specific pan-family limitation to carry into a tamago purchase. Marushin instructions.

A shared hot kitchen needs an allocated production or finishing window, the receiving pans and the subsequent cooling/holding provision. Keep cooking/reheating distinct from holding already-hot food. Hot-kitchen equipment for sushi restaurants covers the deeper selection. Shop ERS cooking equipment.

Napkins, menu, check and service accessories Holders/dispensers, refills, storage and presentation. Service positions and opening consumption.
Guest-facing display and decor Actual design role, stable mounting, cleaning and appropriate food separation. Specified plan and installation responsibility.

Keep the body and component identities together. ERS's WZ12-B-D inner tray is expressly named for WZ12-B. That confirms a replacement relationship; check the selected original box offer separately for what it includes. The quantity example below shows how an insert can limit ready presentations.

Large shared vessels and multi-part ware also need their actual dirty landing, compatible washing, drying and clean storage. Select the presentation and support that return. See traditional geta, boats and oke and the full-service sushi format. Shop sushi servingware and bento boxes.

  • Coffee/espresso: selected brewer, grinder for whole beans, actual filter/basket or portafilter arrangement, receiving server/cups, milk pitcher and cold milk provision where used, spent-coffee disposal and compatible water/care supplies.
  • Packaged drinks: appropriate storage/display, opening, pouring and serving pieces.
  • Draft beer: compatible keg/coupler, gas/regulation, product lines/faucet, refrigeration or remote-line cooling, drip/waste and cleaning connections.
  • Wine, shochu, mixed drinks and highballs: the actual opening/preservation, measuring, mixing, straining, garnish, ice and glassware provision; dispensing hardware where selected.

Source and receiver are part of the order. Taiji's TSK-130B specification excludes the source cube and serving bottle while listing a funnel, drain tubing and stopcock. Select the actual bottle for the nozzle, holder and intended fill; it may be a different object from the tabletop pouring ware. TSK-130B specification.

Count complete tea assemblies. Hario's CHJMN-45T has a 450 ml practical capacity and combines a glass pot/lid with a stainless-steel strainer. It supplies a defined brewing assembly, not a fixed number of guests. Hario specification · CHJMN-45T at ERS.

Packing, retail, pickup and delivery

Specify the closed food package and the whole order it joins. The open packing position, sauce closures, label, utensils, outer bag, waiting space and carrier all consume real provision.

Packing, retail, pickup and delivery
Equipment or supply Include in the specification Quantity basis
Packing bench and supply access Space for the open package/lid, food, companions, closure/check and protected working stock. Largest routine complete orders and concurrent packing.
Sushi trays, bento, bowls and party platters Exact compatible lids/inserts, loaded headroom, food duty and whole-order fit. Actual menu/package mix and complete matched stock.
Portion cups and matching lids Exact compatible codes, separate counts and actual selling units. Portions per applicable order and complete closures.
Nori-separating wrappers or kits Selected wrapper/nori format, fastening/opening and outer package. Actual assembly consumption for the intended product.
Labels, seals and printer/media Required identification/information, matched printer/media/adhesive, application, power and records. Actual packs/batches and label configuration.
Scale for production or sale by weight Suitability for the specific weighing/trade duty, surface, care and connected printing where used. Actual weighing positions and workload.
Bags, carriers, sleeves and utensil packs Loaded fit and orientation, handles, condiments, utensils, napkins and required information. Complete orders and package combinations, including multi-bag meals.
Completed-order waiting provision Appropriate holding method, space, order identity and retrieval. Concurrent complete loads, access and release timing.
Pickup shelf, counter or locker Actual holding duty, customer/staff access, order identity and power/control if needed. Collection pattern and complete-order positions.
Delivery bags, boxes and supports Closed loaded fit, required hot/cold separation, protection, cleaning and return. Route commitments and usable simultaneous loads.
Retail customer-access display Suitable finished-pack case, shelves/load arrangement, reserve and displayed information. Closed packs, facings, customer access and refill.
Physical order and dispatch technology Screens/printers/scanners/devices, mounts, power/network, paper/media and fallback. Actual order/release positions and selected integrations.

Body count is not closed-pack count. ED-8306B is listed as fifty bodies with lids excluded. Identify the exact matching closure and its selling unit before counting those bodies as fifty complete packages.

Check both inner quantities. Amhil pairs ASB200 cups with ASL2 lids. Both master cases contain 2,500 pieces, but the cup inner contains 250 and the lid inner 125. Amhil product table.

For an illustrative allocation, assuming inner units can legitimately be allocated, two cup inners and two lid inners provide 500 cups and 250 lids: 250 closed portions. A 500-portion allocation needs two cup inners and four lid inners. Confirm the actual seller's order unit; this example does not establish split-case availability.

Check the filled, closed order in its waiting and transport arrangement, including tall lids, separate accompaniments and multiple bags. Use takeout and delivery planning or retail/grab-and-go equipment for the relevant handoff. Shop to-go boxes and disposables.

Catering, mobile and shared hospitality service

Choose the transported load and the work performed at the destination. A prepared-food delivery, live sushi station, banquet display and room-service meal require different supports, services and returns.

Catering, mobile and shared hospitality service
Equipment or supply Include in the specification Quantity basis
Food-pan or platter carriers Actual closed load, supporting pan/tray, transport closure, stable orientation and withdrawal. Allocated departures, reserve and return.
Conditioning plates/inserts and dollies Exact compatibility, supports, occupied space and complete loaded handling. Chosen load configuration and return/reconditioning.
Portable counter, bar or work cart Packed/working envelope, complete supports, assembly/locking and storage; actual equipment and receiving lands. On-site work and overlapping deployments.

Destination food protection and service supports Appropriate guards/covers, serving implements, replacement-food lands and used-ware receipt. Service format, environment and replenishment.
Power and permitted operating environment Connections, chargers/batteries/supplies where selected, route and suitability through travel and service. Actual operating state at each stage and venue availability.
Room-service tables, trays and carriers Compatible table/box supports, full covered meal, distinct required hot/cold provision and guest receiving surface. Concurrent commitments through guest use, collection and return.
Return containers and protected tool transport Required clean/soiled separation, containment, blade protection, loaded handling and wash receipt. Actual return loads and destination processing.
Deployment identification and allocation Complete-kit contents, component families, location, commitment and responsible issue/return. Overlapping outlets/events and available complete assemblies.

Record the exact rice-container family and tray arrangement. Sekisui states that medium and deep SP trays can stack together, while shallow SP trays stack with shallow trays. Keep the body, lid and selected tray identities together when adding or replacing components. Sekisui SP-tray guidance.

Use the real closed load when selecting a carrier. A taller food-pan carrier may retain the same pan-format width; conditioning plates, support trays and dollies change the usable arrangement and loaded handling. At the destination, confirm the host's actual space, access, connections and allocated equipment. The kit must also have somewhere to return for processing and storage.

See catering and mobile equipment, commissaries and central kitchens and hospitality sushi programs. Discuss the complete deployment with ERS.

Warewashing, cleaning and staff supplies

Provide the selected objects with a complete compatible return: soiled receipt, the applicable wash/rinse/sanitize route, drying, sorting and protected ready storage. Manufacturer soil-removal and material-care instructions are part of that specification; they do not alone establish the complete food-contact process.

Warewashing, cleaning and staff supplies
Equipment or supply Include in the specification Quantity basis
Handwashing provision Applicable sinks/services, conveniently usable placement, soap/towel dispensers and refills. Actual work points and approved premises/host allocation.
Food-preparation washing fixture Appropriate basin, services, working lands and separation of duties. Retained food-washing work and accepted plan.
Manual equipment/utensil washing Applicable compartments or accepted alternative, drainboards/lands and compatible wash/rinse/sanitize provision. Largest actual objects/removed assemblies and overlapping soiled loads.
Dishmachine or glasswasher Selected type/services, racks, inlet/outlet arrangement, chemistry or heat verification, care and support. Compatible loaded objects and complete return demand.
Pre-rinse, scrap and dirty staging Sink/spray where used, scrap handling and safe incoming lands. Concurrent returns, including large ware and machine parts.

Janitorial sink, mop/bucket and cleaning tools Suitable service/waste, hanging/drying and separated chemical storage. Actual premises-cleaning duties and host/operator allocation.
Waste, recycling, organics and oil handling Correct receptacles/lids/liners, working and reserve staging, removal access and frying-oil provision if used. Actual waste streams and collection arrangement.
Incident cleanup/disinfection supplies Procedure-appropriate product/use, protective items, containment, testing if required and controlled storage. Actual adopted incident procedure.
Chef workwear and protective supplies Uniforms/aprons, hair restraints and task-appropriate food-contact/protective items. Crew, changes and laundering/return.
Staff belongings and clean/soiled linen storage Designated separated storage, issue/return and laundry responsibility. Actual crew and linen commitments.
Restroom and general hygiene supplies Applicable operator-responsible fixtures/dispensers, soap/paper/refills and cleaning provision. Actual premises, service and host responsibilities.

Measure the largest actual object or removed machine assembly when selecting wash accommodation. Also match the object's treatment limits to the wash process. A part fitting through a machine opening does not establish permission to wash it there.

Test supplies are method-specific. Hydrion QT-40 is a particular multi-quat test with its matching chart and directions. TL1-160 is an irreversible surface-temperature indicator; the maker distinguishes it from rinse-pipe testing. Select the chemical formulation/range or temperature-verification method the operation actually requires. QT-40 · TL1-160 · indicator instructions.

Keep routine care, incident disinfection and textile laundering assigned to their actual procedures. The commercial requirements guide and maintenance, cleaning and parts guide carry the detailed methods and equipment-specific limits. Shop kitchen supplies and disposables.

Operating, cleaning and service access Door/lid travel, vessel/drawer withdrawal, largest-part removal, filters/drains and eventual service/removal. Occupied layout with adjacent equipment and work in use.
Finishes, lighting and exclusion Suitable cleanable floor/wall/ceiling interfaces, protected lighting, pest exclusion and building work. Actual premises and retained operation.
Accessible dining, ordering and pickup Applicable routes, seating/counter functions and full-use clearances. Actual service design and review.
Required safety equipment and signs Applicable fire, first-aid, protective/emergency provision and notices, mounting and maintenance allocation. Actual authority/work assessment and premises scope.

Keep final connection and modification of the building's services separate in the quotation. Check the occupied layout with doors, drawers, lids and removed parts in their working positions. The correct review considers the actual address, menu, equipment and use of the guest-facing counters. Use equipment specifications and commercial requirements for that work, and supplier evaluation to settle the offered scope.

Set opening quantities and reconcile existing stock

First establish the required usable provision. Fixed equipment follows retained duty and workable loads; tools and vessels follow simultaneous work and return; service ware follows complete presentations; carriers follow allocated departures; consumables follow the work that uses them over a defined opening period.

Set opening quantities and reconcile existing stock
Equipment or supply Include in the specification Quantity basis
Opening consumable quantities Complete applicable supply through the defined opening period and first usable replenishment, with storage and delivery dates. Actual item-consuming work, starter inclusions, eligible stock and selling units.

Reconcile what is genuinely available

Count the correct item, in usable condition, with its required companions and at the required destination. Shared stock must be allocated without displacing another commitment. Incoming purchases contribute at their credible usable-receipt date; equipment awaiting installation and pieces awaiting processing or fitting remain unavailable.

Handle a reservation once: either remove the committed units from eligible stock or include their commitment in the requirement. Then subtract eligible provision from required usable quantity and convert any positive gap into the actual selling unit. Reconcile bundles across their component counts. Use capacity and equipment sizing to establish the requirement and ongoing supply and standardization for continuing orders.

Count complete presentations

Illustrative assumptions: eighteen usable presentations are required. Each uses one matching body, insert and lid. Eligible stock is twelve bodies, nine inserts and ten lids. The required eighteen already accounts for the operation's service and return commitments.

Illustrative assumptions · complete presentations
Component Required Eligible retained Gap
Body 18 12 6
Insert 18 9 9
Lid 18 10 8

Buying six complete sets because six bodies are missing produces 18 bodies, 15 inserts and 16 lids: only 15 complete presentations.

If compatible components are separately available, the gap order is six bodies, nine inserts and eight lids. If only complete sets are offered, nine sets produce 21 bodies, 18 inserts and 19 lids, enough for eighteen complete presentations. Compare the actual selling units, surplus components, price and delivery before choosing the purchase.

Finish the opening supply

Reconcile the applicable packaging, wrap/liners, labels/media, machine operating supplies, calibration and test supplies, care chemistry, guest disposables, soap/paper and justified spares already identified in the tables. Account for what arrives with the equipment, what is already usable and what must be separately ordered. Set the required date and protected storage for the real delivered cartons and containers.

The opening period and reserve come from the operation and its confirmed first replenishment. There is no universal weeks-of-stock, per-seat smallwares multiple or spare percentage. Compare the complete purchase through the equipment cost guide.

Close the order and confirm readiness

Carry the selected identities, quantities, selling units and complete companions into the offer. Mark required work as included, separately arranged or still unconfirmed, with the responsible party and usable date.

Close the order and confirm readiness
Equipment or supply Include in the specification Quantity basis
Startup, instruction and documentation Exact model/serial/configuration records, current manuals, startup checks, operating/care instruction and support/warranty documents. Named provider, prerequisites, completed checks and required usable date.
Opening spares and operating supply Justified compatible complete items, protected storage and permitted fitting/return. The interruption covered and the person/service route able to make the spare usable.
Acceptance and remaining conditions Separate identity/condition, complete configuration, installation/startup, intended-duty and handover checks. Named receiver, installer/operator/reviewer as applicable, with open conditions assigned to a person and date.

Installation wording deserves that same precision. Hobart's published comparison separates assembly/startup, final connections and wider electrical/plumbing modifications across its named packages. Those are that provider's scope descriptions; establish the actual work in your own offer. Hobart installation comparison.

Give the receiving party the approved configuration/counts, delivery and placement plan, and applicable seller/carrier reporting instructions before arrival. Preserve the relevant order, delivery and condition evidence when something is incomplete or damaged. Then complete the separate configuration, installation/startup and intended-duty checks with the responsible operator or provider. Include the actual input, loaded receiver, retained finishing and permitted return where they determine acceptance.

A spare also needs a path to use: the correct complete part, required companions, protected storage and someone permitted to fit and check it. Use supplier evaluation for offer and handover detail, and maintenance and parts for continuing support.

Bring ERS the complete scope

Send the menu and incoming preparation, service formats, demand/batch basis and required date; the selected checklist items and net quantities; eligible retained/shared stock; necessary accessories, receivers and opening supplies; and the actual site, connections and access. Identify the work you need supplied and the fit, contents or readiness questions still open.
